Banana Cake

Banana Chocolate Chip & Cranberry Cake

I have baked this cake for over 20 years. Whether it is in a toaster oven, an electric oven or a gas oven, this cake comes out soft and moist. More importantly, it has little sugar and 50% of it is actually banana!

Banana Cake


  • 1/2 cup (1 stick) unsalted butter, room temperature

  • 1/2 cup gula aren / brown sugar

  • 2 large eggs, room temperature Dry:

  • 2 cup flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/2 cup dark Belgian chocolate chips

  • 1/2 cup dried cranberries

  • 6 mashed ripe bananas


  1. Preheat to 375°F and line baking tin with parchment paper.

  2. Beat butter and sugar together. Beat in eggs one at a time.

  3. Mix all dry ingredients together

  4. Add flour into the mix in 2-3 parts. Do not overmix.

  5. Mix in the toppings until evenly distributed.

  6. Bake for 30-45 minutes.
